Fruit & Nut Pancakes

Ingredients

1 cup
wheat flour
1⁄2 cups
rolled oats
1⁄4 cups
sliced almonds
2 teaspoons
baking powder
1⁄2 teaspoons
cinnamon
2
bananas
1 cup
almond milk (or nonfat milk)
1
egg
1 teaspoon
almond extract
1 cup
mixed frozen berries

Instructions

1. In a bowl, combine first 5 ingredients.

2. In another bowl, mash 1 banana and mix with milk, egg and almond extract.

3. Pour liquid ingredients into dry ingredients. Stir until smooth.

4. Slice remaining banana and stir into batter. Add berries.

5. Warm skillet over medium heat. Coat with cooking spray.

6. Poor 1/4 cup batter into skillet. Cook until golden brown, 2 - 3 minutes per side.
