Oatmeal-Carrot Muffins

Ingredients
1⁄2 cup flour
1⁄2 cup wheat flour
3⁄4 cup oatmeal
1 teaspoon baking powder
3⁄4 teaspoon baking soda
1 3⁄4 teaspoons cinnamon
3⁄4 teaspoon salt
1 egg
3⁄4 cup brown sugar
1⁄2 cup vegetable oil
1⁄2 teaspoon vanilla extract
1 toddler size jar of carrot baby food
Instructions

1. Preheat oven to 350.

2. Combine dry ingredients (first 7)

3. Combine moist ingredients

4. Stir by hand only until mixture is moist. Do not over stir.

5. Fill muffin cups 2/3 full. Bake 15 to 18 minutes at 350 degrees.
