Ingredients

1 1⁄2 cup
flour
1 1⁄2 cup
wheat flour
1 cup
brown sugar (packed)
1 1⁄2 teaspoon
baking powder
1 1⁄2 teaspoon
cinnamon
1 teaspoon
salt
1⁄2 teaspoon
baking soda
1⁄2 teaspoon
nutmeg
3  
eggs
15 ounces
pumpkin (canned)
3⁄4 cups
vegetable oil
1 cup
chocolate chips (semi-sweet or dark, if making mini muffins use 1/2 cup mini chips)

Instructions

1. Preheat oven to 400 degrees.

2. In a mixing bowl, combine the dry ingredients.

3. In another bowl, combine egg, pumpkin, and oil.

4. Stir into dry ingredients just until moistened. DO NOT OVER MIX!

5. Fold in chocolate chips.

6. Coat muffin cups with nonstick cooking spray; fill two-thirds full with batter. Bake for 16 - 18 minutes (10 - 12 for mini muffins) or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
