          Ingredients
          1⁄2 cup quinoa (uncooked rinsed)
          2 cups water
          15 ounces cannellini beans (drained & rinsed)
          15 ounces pinto beans (drained & rinsed)
          13 3⁄4 ounces corn and chili tomato-less salsa
          1 cup shredded three cheese blend
              Instructions
              Pour water into large pot. Add quinoa, bring to a boil.
Add remaining ingredients and return to a boil. Lower heat, cover and simmer for 20-25 minutes, or until most of the liquid is absorbed.
Serve in bowls, top with shredded cheese if desired.
