4 large carrots (peeled and cut into coins - about 2 cups)
1⁄4 teaspoon paprika
1 tablespoon olive oil
1⁄4 teaspoon salt
1. Preheat oven to 400 F.
2. Place all of the ingredients in a bowl with a lid and shake to coat.
3. Place on a baking sheet.
3. Roast for 30 minutes tossing every 10 minutes.
