Ingredients
4 cups bran cereal
2 eggs
2 cups buttermilk
1⁄2 cup vegetable oil
2 1⁄2 cups flour
1 cup sugar
3 teaspoons baking soda
1 teaspoon salt
1 cup mini chocolate chips
Instructions
Preheat oven to 350 F.
In a large bowl mix the eggs, buttermilk, oil, and bran flakes. Allow the mixture to sit for a minute so the bran flakes are completely moist.
Combine dry ingredients in a separate bowl.
Slowly add the dry ingredients to the bran mixture and stir just enough to moisten all the dry ingredients.
Fold in chocolate chips.
Grease desired number of muffin cups and fill with 2/3 of batter.
Bake for about 22-25min. Allow to cool and serve.
Notes
Batter can be covered and stored in the frig for 5 days.
