Ingredients
1 tortilla
1⁄4 cup mexican cheese blend (shredded)
1⁄4 cup refried black beans
2 pinches taco seasoning (or to taste)
2 tablespoons red onion (chopped)
2 tablespoons bell pepper (chopped)
2 tablespoons salsa
Instructions
1. Heat beans in microwave (if making for one) or stove top (if making for more). Add taco seasoning to taste and stir until combined
2. Heat a large pan over medium to medium-low heat, spray with olive oil cooking spray.
Assemble quesadillas: spread beans all over tortilla, sprinkle 2 Tablespoons of cheese over half, spread onions & peppers over cheese, add remaining cheese(don’t use more than 1/4 cup of cheese total per quesadilla). Fold tortilla.
3. Grill the quesadillas in the pan until both sides are browned and crispy and the cheese has melted. Top with salsa, maybe some guacamole. Enjoy!
